No-bake white chocolate cheesecake




  I'm a bigger fan of dark chocolate than white chocolate but i have this recipe on  my mind for a while and i really wanted to give it a go.
    As i expected,the cheesecake turned out creamy and airy like a mousse texture and that oreo cookies crumb crust was a good compliment to the delicious filling!
   Even isn't as rich as the dark chocolate cheesecake this dessert will conquer you instantly first with the flavor and then with its visual appearance.
   It is easy to make with absolutely no baking process involved and i can assure you once you'll try it, you'll add this elegant dessert to the list of your favorite recipes!!




Yield :8 portions


INGRIDIENTS

Crust:
  • 150g Oreo chocolate cookies without filling
  • 70g unsalted butter, melted


Filling:
  • 300g  Philadelphia cream cheese,softened
  • 300ml heavy cream min.30% fat content
  • 150g white chocolate,chopped
  • 2 M/L eggs
  • 8g gelatine sheets
  • 2tbsp hot water 
  • 50g caster sugar
  • 1tsp vanilla extract
  • cocoa powder to decorate





DIRECTIONS
  • Grease lightly a 21cm springform pan. 
  • Crush cookies in a food processor until they resemble fine breadcrumbs. Mix cookies with melted butter,then tip the mixture into the pan and press evenly into the base of the pan.
  • Refrigerate for 30 minutes.















Filling:
  • Soak gelatine sheets in a bowl of cold water for 5-10 minutes.
  • Whip heavy cream until stiff peaks form.Refrigerate until ready to use.
  • Add philadelphia cheese to a large bowl and beat with a mixer at medium speed until smooth and free of lumps.
  • Melt the chocolate in a bowl over a saucepan with simmering water.
  • Add melted chocolate to cheese and beat until smooth.
  • Place a bowl over a saucepan with simmering water but do not let the bottom of the bowl touch the water.Place eggs in a bowl and with an electric mixer at high speed start to whisk adding the sugar gradually.Whisk until the mixture becomes thick, fluffy, and triples in volume,for about 4-5 minutes.

            

  • After that , remove the bowl from the saucepan and set aside to cool slightly.
  • Add beaten eggs to cheese mixture and whisk at slow speed until just combined.
  • Then fold whipped cream into cheese mixture.
  • Remove gelatine sheets from the bowl and squeeze out any excess water then dissolve the gelatine in 2 tbsp of hot water.
  • Add gelatine and vanilla extract to the mixture and mix at low speed until well combined.




  • Spread the filling over the prepared crust and gently rap the pan on counter to settle filling .Cover with foil and chill for at least 4 hours or overnight until completely set.
  • After that time,run a knife around the sides of the pan to loosen the cheesecake.
  • Remove the cheesecake from the pan and dust the top with cocoa powder 
  • Refrigerate for up to 3 days.

      o açucar baunilhado é açucar aromatizado com baunilha.Se não tiver pode uzar uma vagem de baunilha.

      How does one replace with gelatin powder.
