Neapolitan pound cake

   Although this pound cake is a little different than the classic recipe you know it’s actually super easy and fun to put together,besides you can play around with different flavors like vanilla and matcha,blueberry,orange,lemon,you name it!!
This neapolitan cake is a beautiful combination of a few flavors that just work together so well. It’s a mix of pineapple,strawberry and chocolate batter baked together to create the most beautiful and delightful striped cake you've ever seen. I've made this cake many times and i can say the inside is always a pleasant surprise.Sometimes has the most beautiful swirl pattern and other times ends up with fantastic stripes.


The separadors are the secret to achieve that striped effect,they must be well fixed on the botton and sides of the pan, if they slide away while you pour the batter into the pan you’ll end up with a swirl effect. personally like both of them.
And one more thing,in this recipe i switched butter with sunflower seeds oil for an even softer and tender crumb and vanilla with pineapple pudding powder which adds a fabulous depth of flavor. 
The cake is not too sweet,is moist and you can enjoy it for breakfast with a cup of coffee,tea or even milk.With all that said,i'm wishing you happy baking!!!





Yield:12-13 slices


Ingredients:

  • 5 L eggs
  • 150g all-purpose flour
  • 150g caster sugar
  • 75ml sunflower oil
  • 25g strawberry instant pudding powder
  • 25g pineapple instant pudding powder
  • 4 tsp dutch processed cocoa powder



DIRECTIONS

  • Preheat oven to 180ºC/350F (convection/fan forced mode)
  • Butter and line wih parchment paper 25cm x 8cm x 8cm loaf pan. 
  • Place eggs in a large,clean bowl and with your mixer at high speed start to whisk adding the sugar gradually.Whisk until mixture becomes thick, fluffy, and doubles in volume.
  • Reduce the mixer speed to medium and slowly add sunflower oil.Whisk until just combined.




  • Sift the flour on top of the egg mixture,a little at a time, and using a silicone spatula fold it gently from the bottom to top.




  • Divide the batter evenly between 3 medium size bowls
  • Add sifted cocoa to one bowl and mix until well combined.
  • Add  pineapple pudding powder to the another bowl  and mix until well combined.
  • Add strawberry pudding powder to the third bowl and mix until well combined.









Make cardboard separators:

  • Cut two cardboard separators with the interior dimentions of the pan,wrap each one in aluminium foil. 
  • Place them vertically into the pan with the same distance one from each other and the sides of the pan,creating 3 same size sections.
  • Make sure they are well fixed on the bottom of the pan and on the edges of the pan,so the batter will not spread out .
  • Fill the first separator with the batter of your choice,then second one and then the last one.


















  • Gently pull out the first separator and at the same time scrape down the batter using a rubber spatula.Repeat the process with the second separator.
  • Bake at 180ºC for 40-50 minutes or until the toothpick inserted into center comes out clean.
  • Let the cake cool in the pan for 10 minutes then remove from pan and place it onto a wire rack to cool completely.

  2. Ma bucur ca ai lasat comentariul sa pot pune link cu surs de inspiratie. Asa cum am scris la inceput nu am retinut nici sursa, nici reteta, mi-a placut ideea si acum toata lumea va sti ca este a ta. Din pacate nu mi-am salvat adresa ta in favorites, dar acum este pusa printre link-urile care imi plac. Multumesc pentru sursa de inspiratie! Din pacate al meu nu a iesit asa de frumos ca al tau....Poate daca tineam minte si ordinea lor aluatul alb nu ramanea atat de subtire.

  3. Ficou mesmo bonito, e que original a ideia dos separadores! :) São 3 sabores que me agradam muito sobretudo quando combinados. É, sem dúvida, receita a experimentar em breve :)
