Cinnamon sugar mini doughnuts



Nothing beats fluffy,warm homemade doughnuts,nothing beats the aroma of freshly baked homemade bread etc...i'm sure you've heard it all the time.
And this is true,nothing beats a home-cooked meal or baked goods,nothing tastes and smells as good as a homemade food! 

And why we say it constantly?maybe because we cook for the loved ones or maybe because some foods bring back memories and make us feel good,what do you think?
To me these doughnuts bring me back childhood memories,the smell,the texture is so satisfying in a way that doughnuts shops can't replicate!
I prefer yeast doughnuts to cake ones and obviously deep fried instead of baked ones maybe because this is how my mom and my grandma' have been making them since i can remember. 
I also prefer my doughnuts warm because they taste better and because this is the best way to enjoy a doughnut besides in our house they don't last long,one hour later they're history!

INGREDIENTS

  • 400g all-purpose flour,sifted
  • 165g lukewarm milk
  • 15g fresh yeast
  • 50g caster sugar
  • 50g unsalted butter,soften
  • 2 large eggs
  • grated zest of a lemon
  • 1tsp vanilla extract
  • pinch of salt

For the coating:
  • 100g caster sugar
  • 1 tbsp ground cinnamon

DIRECTIONS
  • In a small bowl add sugar,fresh yeast and 165g lukewarm milk.Stir to combine and leave to sit for 10 minutes until it's foamy.
  • Mix flour and salt together in a stand mixer bowl.
  • Add yeast mixture,lightly beaten eggs,butter,vanilla extract and lemon zest.Using a wooden spoon stir to combine..Attach the dough hook and mix on low for approx.5-7 minutes until the dough comes together.

  • If you mix by hand,put the flour and salt into a large bowl,make a little cavity in the middle and add yeast mixture,lightly beaten eggs ,vanilla extract and lemon zest.Using a wooden spoon stir until you have a soft and sticky dough.
  • Turn the dough out onto a lightly floured surface and start adding softened butter little by little while kneading.Continue kneading until the butter is completely incorporated and the dough is smooth.It takes approx.12 minutes.The dough is slightly sticky,this is how it's supposed to be so don't add more flour.

  • Transfer the dough to a large bowl lightly greased with vegetable oil,cover with a towel and leave to rise in a warm place for approx 1h 30-2 hours or until doubled in size.
  • Once dough has risen,punch the air out and place the dough onto a lightly floured surface.Using a rolling pin,roll out the dough to about 1cm thickness.Using a 6 cm biscuit round cutter or a glass,cut rounds of dough and a 2cm round cookie cutter to cut out the centers.Dip the cutter into flour before each cut.





  • Lay them out on a tray and cover them with a large,clean towel and let them rise for approx. 1h
  • In a mediu plate,combine sugar and cinnamon ,set aside for later use.
  • After the dough has been proofed,heat vegetable oil to 180ºC in a large heavy saucepan.Cook donuts 4-5 at time,turning occasionally until golden brown on both sides.
  • Remove from oil and toss in cinnamon sugar (or powdered sugar,if you prefer)on both sides.Place donuts onto a plate and serve!!!
  • Donuts are best served warm or eaten on the same day.Store them in an airtight container at room temperature.

    Deparei me com aquele gelado lindo agora com estes donuts que ate podem ser feitos no forno adoroooo donuts e no forno nunca pensei que ficassem bons:)
