Chocolate salted caramel walnut cake

Chocolate and caramel is one of the most popular and delicious flavor combinations i know,they were meant to be together!But my personal favorite is salted caramel,chocolate and toasted nuts combo.I'm a sucker for all things sweet and salty and this flavor combination it really satisfies all your taste buds!!
If you are in my team then this chocolate and caramel cake is the perfect dessert for you and for all chocolate and caramel fans out there.
A moist chocolate sponge cake is filled with the most delicious toasted walnut buttercream,coated in a layer of indulgent chocolate ganache and topped with a fine layer of salted caramel sauce.
Prep Time:
Cooking Time: 30-40 min
Yield:6-8 slices
Ingredients sponge cake:
- 4 eggs(M-L size)
- 125g(1 cup) caster sugar
- 80g all-purpose flour
- 40g cocoa powder
- 60ml sunflower oil
Walnut buttercream:
- 200g unsalted butter,soften
- 2 M/L eggs
- 100g caster sugar
- 30g icing sugar
- 70g toasted walnuts,roughly chopped
- 2 tbsp nescafe classic instant coffee
Chocolate ganache:
- 150ml heavy cream 30% fat content
- 150g dark chocolate 50% cocoa content
Caramel sauce:
- 70g caster sugar
- 30ml water
- 90ml heavy cream 30% fat content
- 10g unsalted butter
- 1/8 tsp sea salt
Topping(optional):
- 75g milk or dark chocolate,chopped
DIRECTIONS
Sponge cake:
Sponge cake:
- Preaheat oven to 180ºC/350ºF(convection/fan forced mode)
- Butter and line with parchment paper a 20cm diameter springform pan.
- Place eggs in a large,clean bowl and with your mixer at high speed start to whisk adding sugar gradually.Whisk until mixture becomes thick, fluffy, and doubles in volume.
- Reduce the mixer speed to medium and slowly add sunflower oil.Whisk until just combined.
- Sift the flour and cocoa powder on top of the egg mixture,a little at a time, and fold it gently using a silicone spatula.
- Pour the batter into the prepared pan,spread it evenly with an offset spatula and bake at 180ºC/350ºF for 25-30 minutes until the toothpick inserted into the center of the cake comes out clean.
- When the timer goes off, turn the oven off and remove the pan from the oven.
- Cool in the pan for 10 minutes then release the cake from the pan and transfer to a wire rack to cool completely.
Walnut buttercream:
- Place butter,icing sugar and instant coffee in a medium bowl and using an electric mixer whisk until smooth.Set aside.
- Place a medium bowl over a saucepan with simmering water but do not let the bottom of the bowl touch the water.Place the eggs in a bowl and with an electric mixer at high speed start to whisk adding the sugar gradually.Whisk until the mixture becomes thick, fluffy, and triples in volume,for about 4-5 minutes.
- After that, remove the bowl from the saucepan and set aside to cool slightly.
- Gradually add beaten eggs to butter mixture and whisk at slow speed until just combined.
- Fold in toasted walnuts and refrigerate until is ready to use.
Caramel sauce:
- Add sugar and water to a medium saucepan.Place saucepan over medium low heat.Bring to a simmer stirring from time to time until sugar is dissolved
- Once the sugar has dissolved boil the syrup without stirring until is deeply golden.
- Remove the saucepan from the heat and add the heavy cream.The mixture will splatter so be careful!
- Return to low heat and cook stirring constantly until the caramel is smooth.
- Remove from the heat, add 10g unsalted butter,1/8 tsp sea salt and stir to combine.
- Set aside until cooled to room temperature.
Assemble the cake:
- Cut the cake in 2 halves widthwise.
- Place one half of the cake into a serving plate cut side up.
- Spread walnut buttercream over the layer.
- Place the second half of the cake on top,cut side down.
- Place in the fridge and start to prepare chocolate ganache.
Chocolate ganache:
- Chop chocolate and place it in a medium bowl.
- Heat heavy cream in a small saucepan.Once it comes to a simmer pour it over the chopped chocolate.Let it sit for a minute then mix it with a spatula until chocolate is melted.
- Let it sit at room temperature for 15 minutes.
- After that time pour the ganache over the cake and with an offset spatula push the ganache towards the edges and down over the sides of the cake.
- Refrigerate for 30 minutes.
- Once chilled,remove the cake from the fridge and spread carefully the caramel sauce over the top of the cake.
- Drizzle with melted chocolate,if desired.
- Refrigerate the cake until ready to serve.
Topping(optional):
- Place 75g dark chocolate or milk chocolate in a small bowl over a saucepan with simmering water.Allow the chocolate to melt,stirring occasionally,until is completely melted.
- Transfer melted chocolate to a small piping bag and drizzle over the cake.

DeleteAgora tem é um problema de actualizações das minhas publicações, ou seja, a minha publicação mais recente não aparece nas sidebars dos blogues que têm o meu banner.
Só diz "Teste" e eu não fiz teste nenhum.
Enfim, o vírus atacou forte e feio, a empresa está a tentar corrigir esse pormenor, mas no mais está limpo de infecções, felizmente !
