Hungarian cookies

   I’m always looking for inspiration for my recipes and every morning while i drink my coffee leafing  through cookbooks or food magazines became a habit.
I love all my cookbook collection but it is an old cookbook i always return to when i need easy meal ideas,is a cookbook that i found in a trash bin(who throws books away?!!) when i was in school.
There i discovered this cookie recipe which is as simple as any cookie recipe but what really intrigued me was the addition of hard boiled egg yolks.None of the cookie recipes i know call for boiled egg yolks so i was pretty curious on how these will turn out.
The name itself “hera cookies”made me curious too because i never heard about it,so before giving them a try i made a quick search on google but couldn’t find any cookie recipe with that name.
Desperate to discover if anyone else heard about or tried them i posted the recipe on facebook and a fellow food blogger told me that they actually are hungarian cookies.
Google it again and i discovered a few recipes which means they are known as hungarian cookies and so i called them!
One mention i would like to make that the boiled egg yolks are a very clever addition to the recipe,they add richness and color to the dough and they are tender than you image.






Yield :23-25 cookies


Ingredients:
  • 6 hard boiled egg yolks
  • 170g unsalted butter,softened
  • 140g icing sugar
  • 280g all-purpose flour
  • 1tsp grated lemon zest
  • 1tsp vanilla extract

For dipping:
  • 150g dark or milk chocolate


DIRECTIONS
  • Add butter and sugar to a medium bowl.
  • Put egg yolks into a mesh sieve and push into a bowl with a rubber spatula or the back of the spoon.
  • Beat with an electric mixer until smooth for about 25-30 seconds.
  • Stir in vanilla extract,lemon zest,salt and mix until just combined.
  • Add the flour and mix with your hands  for about 2 minutes,until everything comes together.
  • Form into ball ,roll up the dough in plastic wrap and chill for 2 hours until firm.


  • After that time,preheat oven to 175ºC/345ºF(convection/fan forced mode)
  • Line a baking tray with parchment paper.
  • Roll out dough on a lighthy floured surface to 0,7cm thickness and cut cookies into desired shapes.


  • Place the cookies on the tray and bake at 175ºC/345ºF for about 15-18 min until cookies are slightly golden brown at the edges.
  • When done,remove the pan from the oven.

  • Using an offset spatula carefully transfer the cookies(they are still soft but they harden as they cool )to a wire rack to cool completely.  
  • Melt the chocolate in a small bowl over a pan with simmering water.
  • Dip ½ of each cookie in the chocolate and place on a baking sheet lined with parchment paper. Let them set at room temperature until chocolate hardens.
  • Store them in an airtight container.

Olá Sandra,procurei na internet e encontrei algumas receitas parecidas.Se calhar são bolachas húngaras mas as receitas que eu encontrei eram com chocolate e com ovos(gemas) não cozidos a minha receita era sem chocolate e com gemas cozidas.No livro tinha esse nome "hera".é um livro de culinária muito antigo,sem photos.De qualquer forma,já não interessa o nome :).elas são mesmo deliciosas.
