Baked pears in pineapple/orange juice


          If you are a poached pear fan then you will gonna love these baked pears.The fruit is cooked in orange/pineapple fresh juice until the liquid is reduced to a thin syrup and the pears are lightly caramelized,is as delicious as it sounds! But there are more reasons why you should add this delightful dessert to your baking to-do list ASAP!First,is simple and versatile.You can use any kind of fresh juice you like.


It looks very appealing and is an excellent dessert for any occasion,last but not least satisfies all your sugar cravings!
As i said,i made two versions for you,one with orange juice and the other one with pineapple juice,they both are very flavorful but my favorite(and it was very hard to choose)is pineapple one-sweet,spicy with a pleasant tarteness,a delightful experience for your taste buds!
They are delicious plain but ice cream,whipped cream,greek yogurt,creme fraîche or even mascarpone cheese on top is a must and to keep things interesting you can add some crunchy topping as well!Enjoy!

Yield:6-8 portions



INGREDIENTS
(orange version)
  • 3,4 medium ripe but firm pears(any variety)
  • 100g caster sugar
  • 250ml fresh orange juice
  • 5-6 orange rind strips
  • 1 bay leaf
  • 1 cinnamon stick
  • 1vanilla pod or vanilla paste

Optional:
  • toasted flaked almond or walnuts for a crunchy topping(optional)
  • greek yogurt,creme fraîche,mascarpone cheese or ice cream for serving




INGREDIENTS
(pineapple version)
  • 3,4 medium ripe but firm pears(any variety)
  • 100g caster sugar
  • 250ml fresh pineapple juice
  • 1/4 tsp(or more if you like it spicier) ground ginger or fresh ginger
  • 1 cinnamon stick
  • 1vanilla pod or vanilla paste

Optional:
  • toasted flaked almond or walnuts for a crunchy topping(optional)
  • greek yogurt,creme fraîche,mascarpone cheese or ice cream for serving


DIRECTIONS
(orange version)
  • Preheat oven to 190ºC/374ºF (convection/fan forced mode)
  • Peel the pears,cut them in half and scoop out the cores.
  • Add the sugars,orange juice,vanilla pod or vanilla paste,cinnamon stick,bay leaf and orange rind to a baking dish large enough to hold the pears in one layer.Using a spoon or a wire whisk gently mix to combine.
  • Place pears,cut side down in the dish.
  • Bake at 190ºC/374ºF for 1-1h30 ,basting the pears occasionally,until the juice has reduced down to a syrup and the pears are completely tender.
  • Remove from the oven and let cool slightly before serving.
  • Drizzle the syrup over each pear and serve warm,preferably with ice cream,whipped cream,greek yogurt or creme fraîche on top.
  • Leftovers are good eaten at room temperature or slightly warmed.

Notes:
  • Baking time may vary between 1h and 1h30 minutes depending on the size,the variety and ripeness of the fruit.
