One drizzle bowl lemon cake


This super easy lemon cake is the ultimate dessert for lemon lovers,everything comes together in one bowl with no special mixing method and minimal cleanup.It has the perfect ratio of sweet and tart,it's tender,moist with a wonderful lemon flavor and the glaze provides a delightful crunch in each bite.It's the perfect dessert to enjoy with a cup of tea or coffee,or as a afternoon snack.Enjoy!


Prep Time: 10 Minutes
Cooking Time: 30-40 Minutes
Yield:1 loaf





INGREDIENTS:
  • 3 large eggs,room temperature
  • 200g AP flour or cake flour
  • 150g caster sugar
  • 100g full fat greek yogurt/crème fraîche
  • 60ml vegetable oil
  • 5g(1tsp) baking powder
  • 1tbsp grated lemon zest
  • 2 tbsp freshly squeezed lemon juice

Lemon icing:
  • 100g icing sugar
  • 2 tbsp freshly squeezed lemon juice

DIRECTIONS
  • Preaheat oven to 175ºC /345ºF(convection/fan forced mode)
  • Grease and line with parchment paper a 25cm x 11cm loaf pan.
  • In a large bowl,add eggs,sugar,greek yogurt,vegetable oil,lemon juice,lemon zest and mix until smooth.
  • Sift flour and baking powder on top of the mixture and fold it in 2-3 additions.Using a hand whisk,fold until combined and no pockets of flour remain,ensuring not to over mix.
  • Pour the batter into the prepared pan. 
  • Bake in the preheated oven at 175ºC/345ºF for 30-40 minutes until golden brown on top and the toothpick inserted into the center of the cake comes out clean.
  • Let the cake rest in the pan for 10 minutes then remove the cake from the pan and transfer to a wire rack to cool completely.
  • Mix icing sugar with lemon juice in a small bowl until you have a smooth paste(if the mixture is too thick add an extra1/2 tsp of lemon juice.Spread over cooled cake and serve.
